Grilled Eggplant Sandwich

Y'all, you must try this sandwich. It's delish.

I wasn't always an eggplant lover. I think the trick is drying out the eggplant a little before cooking or grilling it.

Ingredients:
Ciabatta Bread
Eggplant
Tomatoes
Mozzarella Cheese
Basil
Olive Oil
Salt & Pepper

Slice up the eggplant and lightly salt. Place paper towel over eggplant to dry up any excess water. Leave for about 2 hours.

Lightly drizzle olive oil and sprinkle some pepper on eggplant. Grill eggplant for about 10 minutes each side. You can also opt to broil eggplant. Put slices of mozzarella cheese on to melt.

Lightly toast ciabatta bread. Drizzle olive oil and sprinkle bread with salt and pepper. Place eggplant on toasted bread. Add slices of tomato and basil. Enjoy!
